Last year, according to the city, the composting program diverted nearly 28 tons of food waste from area landfills, saving nearly 1,600 gallons of gas that would have been used to truck it there. And by composting that waste rather than disposing of it in the traditional way, 5.6 fewer metric tons of greenhouse gases were emitted.
