Vegan AF brings Unique Twist to Mexican-American Dishes
Vegan AF, the plant-based restaurant that opened a year ago in Jersey City, at the height of the pandemic lockdown, is continuing its focus on takeout and delivery in order to keep its customers and employees safe.
Owners Norma Perez and William Toledo, who immigrated to the United States from Ecuador, based their business on a Mexican-American fusion menu that includes hamburgers, burritos, tacos, quesadillas, nachos, chili and hotdogs, Both Perez and Toledo have said they adopted a plant-based diet due to health reasons—including, for Perez, a 2019 diagnosis of early-stage stomach cancer.
Burgers
play a starring role at Vegan AF, which offers four types of patties—including
the Beyond burger and Impossible burger and two homemade options, a spicy
burger and a sweet apple burger—served on a sesame seed bun and topped with
tomatoes, onions and lettuce or spinach, with a side of crispy fries. It also
offers 10 signature burgers, including a teriyaki burger, a jalapeno and
guacamole burger, and the chipotle-barbeque-inspired Hottie from the Heights
burger. It also offers plant-based hot dogs and sloppy joes, served Mexican or
American style.
